  • 1 cup hot reduced-fat milk
  • 1 egg yolk
  • 3 cups all-purpose flour
  • 2 ½ tablespoons sugar
  • 2 ¼ teaspoons active dry yeast
  • 1 ½ tablespoons butter
  • 1 teaspoon salt
  • Black food coloring
  • Red food coloring

Instructions

  1. In a small bowl, whisk together hot milk and egg yolk. Microwave for an additional 25–30 seconds to keep warm.
  2. In a large bowl or stand mixer, combine flour, sugar, and yeast.
  3. Add the warm milk mixture along with butter and salt; stir until combined into a rough dough.
  4. Knead by hand for about 10 minutes or with a dough hook on low speed until smooth.
  5. Divide the dough into portions, let rest briefly under a tea towel.
  6. Color one portion with black food coloring and another with red; knead until evenly colored.
  7. Let each dough rise in a warm place until doubled in size (about 1.5 hours).
  8. Punch down each piece, roll out into rectangles, stack them in color order, then roll to form a loaf.
  9. Place in a greased loaf pan; cover and let rise again until doubled (about 1 hour).
  10. Preheat oven to 375°F (190°C) and bake for about 30 minutes or until hollow when tapped.
