  • 2 lbs lamb shoulder, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper, optional
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 1 cup crushed tomatoes
  • 1 cup beef or lamb broth
  • 1/2 cup full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat oil in a heavy-bottomed pot over medium heat. Sauté onions until translucent. Add garlic and ginger; cook until fragrant.
  2. Add spices and toast for 1-2 minutes.
  3. Brown the lamb on all sides (about 5-7 minutes).
  4. Stir in tomato paste and crushed tomatoes; pour in broth and bring to a simmer.
  5. Cover and let simmer on low heat for 1.5 to 2 hours until tender.
  6. Stir in coconut milk and season with salt and pepper. Simmer for an additional 10 minutes before serving.
