  • 500g chicken breast, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp chili paste or sriracha
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 cups jasmine or basmati rice
  • 4 cups water
  • Pinch of salt

Instructions

  1. Rinse the rice under cold water until clear. In a pot, combine rinsed rice, 4 cups water, and a pinch of salt. Bring to a boil, cover, and simmer until fluffy.
  2. Marinate chicken pieces in soy sauce and chili paste for about 10 minutes.
  3. Heat vegetable oil in a wok over medium-high heat. Sauté minced garlic and sliced onion until fragrant.
  4. Add marinated chicken and cook until golden brown on all sides.
  5. Stir in sliced bell peppers and cook until slightly tender but crisp.
  6. Mix in the remaining chili paste and cornstarch slurry; cook until sauce thickens.
  7. Serve hot alongside the fluffy steamed rice.
