  • 500 g chicken breast, cut into bite-sized pieces
  • 1 green bell pepper, sliced into strips
  • 1 red bell pepper, sliced into strips
  • 1 medium onion, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • crushed red chili flakes (to taste)
  • 3 tbsp soy sauce
  • 1 tbsp plant-based oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • 1 cup uncooked jasmine rice
  • 3 cups water
  • Pinch of salt

Instructions

  1. Rinse jasmine rice under cold water until clear. In a pot, combine with water and a pinch of salt; bring to a boil, then simmer covered until fluffy.
  2. Heat vegetable oil in a wok over medium-high heat.
  3. Sauté minced garlic and ginger until fragrant (about 30 seconds).
  4. Add chicken pieces, stir-frying until golden brown on all sides.
  5. Add sliced onion and bell peppers; cook until slightly softened yet crunchy.
  6. Stir in soy sauce, plant-based oyster sauce, sesame oil, and chili flakes. If desired, add cornstarch mixed with water for thickness.
  7. Stir-fry for an additional 2–3 minutes until well coated.
  8. Serve hot over jasmine rice.
