  • 2 slices whole grain or sourdough bread
  • 1 tbsp cream cheese or cashew spread
  • 2 soft-boiled eggs
  • 45g cremini mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tsp olive oil or butter
  • Salt, pepper, and chili flakes (optional) for seasoning
  • Fresh parsley for garnish

Instructions

  1. Boil the eggs: In a medium saucepan, bring water to a boil. Gently lower the eggs into the water and boil for about 7 minutes for a soft center. Transfer them to an ice bath to cool before peeling.
  2. Sauté veggies: Heat olive oil in a frying pan over medium heat. Add sliced mushrooms and cook until golden, then add spinach until wilted.
  3. Toast assembly: Spread cream cheese on one slice of toast and layer with tomato slices. On the second slice, top with sautéed mushrooms.
  4. Plate & finish: Arrange toast alongside halved soft-boiled eggs and wilted spinach. Season with salt, pepper, and garnish with parsley.
