2 slices whole grain or sourdough bread
1 tbsp cream cheese or cashew spread
2 soft-boiled eggs
45g cremini mushrooms, sliced
1 cup fresh spinach
1 tsp olive oil or butter
Salt, pepper, and chili flakes (optional) for seasoning
Fresh parsley for garnish
Instructions
Boil the eggs: In a medium saucepan, bring water to a boil. Gently lower the eggs into the water and boil for about 7 minutes for a soft center. Transfer them to an ice bath to cool before peeling.
Sauté veggies: Heat olive oil in a frying pan over medium heat. Add sliced mushrooms and cook until golden, then add spinach until wilted.
Toast assembly: Spread cream cheese on one slice of toast and layer with tomato slices. On the second slice, top with sautéed mushrooms.
Plate & finish: Arrange toast alongside halved soft-boiled eggs and wilted spinach. Season with salt, pepper, and garnish with parsley.
