  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 tbsp all-purpose flour, optional (for thickening)
  • Crusty bread bowls

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear the beef cubes until browned on all sides.
  2. Remove beef and sauté onions, garlic, carrots, and celery in the same pot until softened.
  3. Return beef to the pot along with potatoes, tomato paste, thyme, rosemary, bay leaves, salt, and pepper. Cover with beef broth.
  4. Bring to boil, reduce heat to low, cover, and simmer for 2–3 hours until beef is tender.
  5. Optionally thicken by mixing flour with water and stirring into stew during the last 30 minutes.
  6. Hollow out bread bowls and toast if desired. Serve stew hot in each bowl.
