  • 6 roma tomatoes (halved)
  • 1 cup cherry tomatoes (whole)
  • 1 medium yellow onion (roughly chopped)
  • 1 head of garlic (halved)
  • 1/4 cup extra-virgin olive oil
  • 1 cup vegetable broth
  • 1/4 cup heavy cream
  • Fresh basil leaves
  • 1 teaspoon balsamic vinegar
  • 1 french or sourdough baguette (thinly sliced)
  • Olive oil and shredded gruyère cheese (enough to cover toast surface)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. On a baking sheet, combine halved roma tomatoes, whole cherry tomatoes, chopped onion, halved garlic, olive oil, salt, and pepper. Roast for 30-40 minutes until tender.
  3. While roasting, prepare crispy toasts by drizzling olive oil over baguette slices, topping them with shredded Gruyère cheese, and baking until golden.
  4. Once roasted, blend tomato mixture with vegetable broth and basil until smooth in a high-speed blender.
  5. Stir in heavy cream and balsamic vinegar before serving.
