  • ½ cup (120 g) brown sugar
  • ½ cup (100 g) granulated sugar
  • ½ cup (125 g) pumpkin puree
  • 1 egg yolk
  • 1 tsp pumpkin pie spice
  • 2¾ cups (265 g) all-purpose flour
  • 1 tsp baking soda
  • 1½ cups (250 g) white chocolate chips

  1. Preheat oven to 350°F (180°C). Line a cookie sheet with parchment paper.
  2. Blot the pumpkin puree with a paper towel to remove excess moisture.
  3. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the blotted pumpkin puree, egg yolk, and pumpkin pie spice; mix until well combined.
  5. Gently fold in flour and baking soda until just combined.
  6. Stir in white chocolate chips evenly.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them two inches apart.
