  • 1 cup unsalted butter, melted
  • 1 1/2 cups brown sugar, divided
  • 2 cups pumpkin puree
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine flour, oats, 1 cup brown sugar, baking soda, and salt. Stir in melted butter until well-mixed to create the crumble mixture.
  3. Press half of the crumble mixture into the prepared baking dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle the remaining crumble mixture over the top; add chopped walnuts if desired.
