  • 1 medium sweet potato, diced
  • 1 ripe avocado, sliced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Optional: fresh parsley or cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper. Roast for 20-25 minutes until golden brown.
  2. In a skillet, heat olive oil over medium heat. Cook ground beef or turkey until browned. Stir in tomato paste, cumin, smoked paprika, salt, and pepper; simmer for 2-3 minutes.
  3. Assemble the bowl by layering cooked meat at the bottom, topped with roasted sweet potatoes and sliced avocado. Garnish with halved hard-boiled eggs if desired.
