  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your workspace by greasing baking paper and placing it on a tray.
  2. Skewer each apple with bamboo skewers firmly.
  3. In a saucepan over medium heat, combine sugar, water, corn syrup, and black food coloring until the sugar dissolves.
  4. Bring the mixture to a simmer, then stop stirring. Wash down any sugar crystals on the pot's sides with a wet brush.
  5. Cook until the mixture reaches hard crack stage (150ºC/310ºF). If no thermometer is available, check by dropping some into cold water—it should form hard threads.
  6. Carefully dip each apple into the caramel mixture, tilting the pan to coat evenly.
  7. Place dipped apples on the prepared tray and allow them to cool completely before serving.
