  • 2 Large eggs
  • 1 Egg yolk
  • 5 TBSP Unsalted butter
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 1/2 cup All-purpose flour
  • 3/4 cup Unsweetened cocoa powder (Dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&M's

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine the white granulated sugar, eggs, egg yolk, melted unsalted butter, oil, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together the all-purpose flour, cocoa powder, cornstarch, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Stir in both types of chocolate chips.
  5. In a separate bowl, mix together the all-purpose flour, cornstarch, baking soda, baking powder, and salt.
  6. In another bowl, cream together room temperature unsalted butter, brown sugar, white granulated sugar, peanut butter, vanilla extract, and egg until fluffy.
  7. Gradually add in the dry mixture until well combined. Then fold in oats and mini chocolate chips along with mini M&M's.
  8. Pour the brownie batter into your prepared pan evenly. Dollop spoonfuls of the monster cookie mixture on top, using a spatula to gently spread it out without fully mixing it; some brownie should be visible.
  9. Bake for about 40 minutes or until a toothpick inserted comes out mostly clean.
  10. Allow the brownies to cool in the pan before cutting them into bars.
