Instructions

  1. In a mixing bowl, cream together softened butter, brown sugar, and vanilla until fluffy. Beat in eggs one at a time.
  2. Gradually add flour, baking soda, cinnamon, ginger, nutmeg, and salt; mix until a dough forms.
  3. Roll out dough to 1/4 inch thickness and cut into pumpkin shapes. Place on a parchment-lined baking sheet.
  4. Freeze cut-out cookies for 15–20 minutes.
  5. Preheat oven to 350°F (175°C) and bake cookies for 8–12 minutes until lightly golden.
  6. Cool on a wire rack before adding melted milk chocolate filling and assembling the cookie halves.
