  • 2 pounds large shrimp (peeled, deveined)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 4 tablespoons butter
  • 1/2 cup finely chopped onion
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh basil (chopped or 1 tablespoon dried)
  • 1/8 teaspoon ground nutmeg
  • 1 cup heavy whipping cream
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded Monterey jack cheese
  • 1/2 cup crushed beef rind crumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat olive oil over medium-high heat and season shrimp with salt and pepper. Sear for 1–2 minutes per side until pink; remove from skillet.
  3. Melt butter in the same skillet; sauté onion until soft. Add garlic, basil, and nutmeg; cook until fragrant.
  4. Pour in heavy cream; simmer until slightly thickened. Stir in half of the parmesan and all of the Monterey jack cheese until smooth.
  5. Place shrimp in the baking dish; pour creamy sauce over them.
  6. Mix remaining parmesan with crushed beef rinds; sprinkle over the dish.
  7. Bake for about 25 minutes or until golden brown on top.
