  • 2 pounds ground beef
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup celery, chopped
  • 1 jalapeno, finely chopped
  • 4 cloves minced garlic
  • 6 slices Turkey Bacon
  • 14 1/2 ounces diced tomatoes
  • 3 ounces tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon oregano
  • 2 teaspoons paprika
  • 1 cup bone broth
  • salt and pepper, to taste
  • cheddar cheese, for topping

Instructions

  1. In a skillet over medium-high heat, cook turkey bacon until crispy. Drain excess fat but leave a thin layer in the skillet.
  2. Add chopped onion, celery, and bell pepper; sauté until crisp-tender.
  3. Stir in ground beef and cook until browned; drain any excess fat.
  4. Add jalapeno and minced garlic; cook for 1 minute. Then mix in chili powder, cumin, oregano, and paprika.
  5. Chop the turkey bacon into small pieces and add back to the skillet along with tomato paste and diced tomatoes. Season with salt and pepper.
  6. Pour in bone broth, reduce heat to low, and let simmer uncovered for about 20 minutes before serving hot topped with shredded cheddar cheese.
