  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tomatoes, pureed
  • ½ cup plain yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder, adjust to taste
  • 1 cup beef broth or water

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium heat. Sauté the onion until translucent (5-7 minutes), then add garlic and ginger; cook for another 2 minutes.
  2. Stir in pureed tomatoes and cook until thickened (about 5 minutes). Mix in spices and cook for an additional minute.
  3. Add beef chunks to the pot; stir well to coat in spices. Brown the beef on all sides (5-10 minutes).
  4. Pour in broth or water and bring to a simmer. Reduce heat, cover, and cook for about 1.5 to 2 hours until beef is tender.
  5. Remove from heat and stir in plain yogurt just before serving.
