  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla until smooth.
  3. In another bowl, combine whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt; stir until well mixed.
  4. Gradually add the dry ingredients to the wet mixture using a rubber spatula; fold gently until just combined.
  5. Grease a muffin tin or use paper liners; fill each muffin cup about 2/3 full with batter.
