  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

  • 1 clove garlic, minced
  • 1 tbsp soy sauce
  • 1 cup cooked white rice
  • ½ cup steamed broccoli florets
  • 1 tsp olive oil
  • ½ tsp paprika or chili flakes (optional)
  • Salt, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté minced garlic and diced onion until fragrant.
  2. Add the cubed chicken to the skillet and cook until browned on all sides.
  3. Stir in sliced bell peppers, soy sauce, and optional spices (paprika or chili flakes). Cook for another 5-7 minutes until everything is tender.
  4. While the chicken cooks, steam broccoli florets until bright green and tender (about 4-5 minutes).
  5. Gently fold steamed broccoli into hot cooked rice and season lightly with salt.
  6. To serve, spoon broccoli rice onto one side of a bowl and add stir-fried chicken and veggies on the other side.
