  • 200g shrimp, peeled and deveined
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 tsp paprika
  • 1 cup white rice (jasmine or basmati)
  • 2 cups water
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup diced carrots
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear. In a saucepan, bring water to a boil and add rice and salt. Reduce heat, cover, and simmer for 15 minutes.
  2. Steam the broccoli, cauliflower, and carrots for about 5-6 minutes until tender-crisp.
  3. In a skillet over medium-high heat, melt butter; sauté minced garlic for about 30 seconds. Add shrimp, paprika, salt, and pepper. Cook for 2-3 minutes per side until the shrimp are pink.
  4. Serve by arranging rice on one side of a plate, adding shrimp next to it, followed by steamed vegetables.
