  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat and sauté chopped onion for about 5 minutes until soft.
  2. Add ground turkey to the pot and cook for approximately 5 minutes, breaking it up as it browns.
  3. Stir in tomato paste, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper.
  4. Mix in drained kidney beans, diced tomatoes (with juices), and chicken broth. Bring to a gentle boil.
  5. Reduce heat and let simmer for 15-20 minutes with the lid slightly open, stirring occasionally.
  6. Season with salt and pepper to taste before serving hot with your choice of toppings.
