  • 1/2 cucumber (chopped)
  • 1 red pepper (chopped)
  • 1 shallot (finely chopped)
  • 2 cloves garlic (finely chopped)

  • 2 tbsp lemon juice
  • Sea salt and pepper to taste

Instructions

  1. Prepare the tomatoes by peeling the skins using boiling water and ice bath method. Chop them into chunks.
  2. In a large bowl, combine chopped tomatoes, cucumber, red pepper, shallot, garlic, olive oil, lemon juice, sea salt, and pepper. Mix well and let sit for at least 20 minutes.
  3. Transfer the mixture to a blender and blend until smooth.
  4. Chill in the refrigerator for at least 2 hours before serving.
