  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Chill in the fridge.
  2. Boil water in a large pot. Cook shrimp for 2 to 3 minutes until pink.
  3. Prepare an ice water bath and transfer cooked shrimp to cool for 3 minutes before draining.
  4. Chop cooled shrimp into bite-sized pieces and mix with cucumber, green onions, and chilled dressing until evenly coated.
