  • 1 stick butter (softened)
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl or using a stand mixer, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add in the egg and vanilla extract. Mix until well combined. It should have a smooth consistency.
  4. Gradually add in the flour, salt, and baking powder. Mix until just combined.
  5. Using a large cookie scoop, portion out 9 equally sized balls of cookie dough. Place them on your prepared baking sheet. Gently flatten each ball to about 1 inch thick. Press down the center of each cookie with a 1/4 measuring cup to create space for the filling.
  6. Bake in your preheated oven for about 8-9 minutes. Once done, let them cool on the baking sheet before transferring them to a wire rack.
