  • 2 1/4 cups whole milk
  • 6 egg yolks
  • 1 cup + 2 tbsp granulated white sugar
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter, cut in cubes
  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup granulated white sugar
  • 1 cup unsalted butter, softened
  • 1 egg
  • 1 tbsp vanilla bean paste
  • 1/2 cup granulated white sugar (for rolling the dough in)
  • 1/2 cup granulated white sugar (for the brulee topping)

Instructions

  1. Prepare the vanilla pastry cream by heating milk and half of the sugar until simmering. Whisk egg yolks, remaining sugar, salt, cornstarch, and vanilla together. Gradually add warm milk mixture, return to heat until thickened. Stir in butter and cool.
  2. For the cookie dough, cream softened butter and sugar until fluffy; mix in egg and vanilla. Combine flour, baking powder, and salt before gradually mixing into wet ingredients.
  3. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop dough, flatten slightly, fill with cooled pastry cream, fold edges around it, and roll into balls.
  4. Roll each ball in granulated sugar and place on prepared sheets; bake for about 9 minutes or until golden at the edges but soft in the center.
  5. Sprinkle with more sugar while warm and caramelize using a kitchen torch or broiler.
  6. Allow to cool on racks before serving.
