  • 1 pound twisted pasta (rotini or fusilli)
  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh chives

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. In a large bowl, toss the chicken cubes with olive oil, Cajun seasoning, and paprika until evenly coated.
  3. Heat a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute or until fragrant.
  5. Whisk in the flour and cook for 1-2 minutes, stirring constantly until a smooth paste forms.
  6. Gradually whisk in the milk and heavy cream until smooth. Bring to a simmer while stirring occasionally.
  7. Reduce heat to low and simmer for 5-7 minutes or until the sauce has thickened slightly.
  8. Stir in 1 cup of mozzarella cheese along with Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  9. Add cooked pasta along with chicken to the sauce. Toss to coat evenly.
  10. Transfer this delicious pasta mix to a serving dish. Top with remaining 1/2 cup of mozzarella cheese.
  11. Broil in the oven for 2-3 minutes or until cheese is melted and bubbly.
  12. Garnish with chopped fresh chives and serve immediately.
