  • 1 cup pumpkin puree
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup coconut oil (liquid state)
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat the oven to 350°F and prepare a 9×5-inch loaf pan by greasing and flouring it.
  2. In a large bowl, mix together the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, nutmeg, flour, baking powder, baking soda, and optional salt until just combined.
  3. Divide two-thirds of the batter into the prepared pan.
  4. In another bowl, blend the cream cheese with granulated sugar and flour until smooth.
  5. Pour the cream cheese mixture over the pumpkin batter in the pan.
  6. Top with remaining pumpkin batter and smooth gently.
  7. Bake for about 48 minutes or until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 15 minutes before transferring to a wire rack.
