  • 2 vegan gelatin sheets
  • 200ml heavy cream
  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 120g powdered sugar
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut
  • Gooey cocoa spread

Instructions

  1. Prepare the coconut mousse by whipping heavy cream with mascarpone until soft peaks form. Gradually add powdered sugar and chill.
  2. Soak vegan gelatin sheets in cold water, then dissolve them in warmed coconut milk. Cool slightly before folding into whipped cream.
  3. Pour mousse into hemisphere molds, adding gooey cocoa spread halfway through each dome. Freeze for at least 6 hours.
  4. Make cocoa Breton shortbread by mixing all ingredients to form dough, resting it, rolling it out, cutting circles, and baking.
  5. Assemble by placing mousse domes on cooled shortbread bases and garnish with grated coconut.
