  • 2.5 lbs beef chuck, cut into large chunks
  • 2 tablespoons coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Salt and black pepper to taste

Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the sliced onion and sauté until translucent. Stir in the garlic and ginger, cooking until fragrant.
  2. Add the red curry paste, ground cumin, cinnamon, turmeric, and chili flakes (if using). Stir well for about 2 minutes until the spices are aromatic.
  3. Add the beef chunks to the pot and sear on all sides until browned.
  4. Pour in the coconut milk and beef broth; stir to combine and bring to a simmer.
  5. Reduce heat to low, cover, and let simmer for about 2 hours or until beef is tender, stirring occasionally.
