  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix brown sugar, softened butter, and cinnamon for the filling.
  3. Combine all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt in another bowl.
  4. In a stand mixer, cream cold butter and granulated sugar until smooth. Add eggs and vanilla extract.
  5. Gradually incorporate the dry ingredients until fully mixed.
  6. Spread the cinnamon filling on rolled-out dough and roll into a log.
  7. Cut into 10-12 equal pieces and bake for 9-11 minutes until golden brown.
  8. Cool cookies before frosting with cream cheese mixture.
