  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper
  • Fresh parsley, chopped

Instructions

  1. Cook rotini pasta in salted boiling water until al dente, about 8-10 minutes. Reserve 2 tablespoons of pasta water before draining.
  2. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil and butter in a skillet over medium-high heat; sear chicken until golden and cooked through (about 3-5 minutes per side). Set aside.
  4. In the same skillet, melt remaining butter and sauté minced garlic until fragrant.
  5. Stir in heavy cream and milk; bring to a gentle simmer. Add Velveeta cubes and stir until melted.
  6. Mix in mozzarella and Parmesan cheese until the sauce is creamy. Adjust consistency with reserved pasta water if needed.
  7. Toss cooked rotini into the sauce until well coated; serve topped with chicken strips and garnish with parsley.
