  • ½ cup butter (room temperature)
  • 1 cup brown sugar

  • 1 teaspoon vanilla extract

  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter (for topping)

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it’s halved (20-30 minutes). Allow to cool.
  2. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  3. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  4. Incorporate the egg and vanilla extract, mixing well.
  5. In another bowl, combine dry ingredients: flour, apple pie spice, baking powder, baking soda, and salt.
  6. Gradually add the dry mixture and reduced cider to the wet ingredients; stir until just combined.
  7. Pour the batter into the prepared loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
